Caril de Amendoim (Caril Tradicional Moçambicano)
Caril de Amendoim is one of Mozambique’s most loved traditional dishes. Rich, creamy, and full of flavour, it combines peanuts, coconut, tomatoes, onions, and chicken to create a comforting meal that is enjoyed throughout the country. In Inhambane, coconut is often added to give the dish its distinctive tropical flavour. Traditionally, it is served with rice or xima (maize porridge).

Ingredients (Serves 4–6)

– 1 whole chicken, cut into portions (or 1 kg chicken pieces)
– 250 g raw peanuts or peanut butter
– 1 onion, finely chopped
– 3 tomatoes, diced
– 3 cloves garlic, crushed
– 400 ml coconut milk
– 2 tbsp cooking oil
– 1 tsp salt
– ½ tsp black pepper
– Fresh coriander or parsley for garnish
– Optional: piri-piri for extra heat

– 1 frango inteiro cortado em pedaços (ou 1 kg de frango)
– 250 g de amendoim cru ou manteiga de amendoim
– 1 cebola picada
– 3 tomates cortados em cubos
– 3 dentes de alho esmagados
– 400 ml de leite de coco
– 2 colheres de sopa de óleo alimentar
– 1 colher de chá de sal
– ½ colher de chá de pimenta preta
– Coentros ou salsa fresca para decorar
– Opcional: piripíri para um sabor mais picante

Method
Modo de Preparação
1. Heat the oil in a large pot and sauté the onion until soft.
2. Add the garlic and tomatoes and cook for 5 minutes.
3. Add the chicken pieces and brown lightly.
4. Blend the peanuts with a little water (or thin the peanut butter with warm water) until smooth.
5. Add the peanut mixture and coconut milk to the pot.
6. Season with salt, pepper, and piri-piri if desired.
7. Simmer gently for 35–45 minutes until the chicken is tender and the sauce is thick and creamy.
8. Garnish with fresh coriander or parsley.
9. Serve hot with rice or xima.

1. Aqueça o óleo numa panela grande e refogue a cebola até ficar macia.
2. Adicione o alho e o tomate e cozinhe durante 5 minutos.
3. Junte os pedaços de frango e deixe dourar ligeiramente.
4. Triture o amendoim com um pouco de água (ou misture a manteiga de amendoim com água morna) até obter um creme.
5. Adicione a mistura de amendoim e o leite de coco à panela.
6. Tempere com sal, pimenta e piripíri a gosto.
7. Cozinhe em lume brando durante 35–45 minutos até o frango ficar macio e o molho espesso e cremoso.
8. Decore com coentros ou salsa fresca.
9. Sirva quente com arroz ou xima.
